I am, for the first time in years, excited about the holiday. I feel the warmth from hearts and lights. That fuzzy love feeling you get for a few days that builds for a few before. Reminders of what I felt as a child mixed with the appreciation and understanding of all that this day means to me.
We all go to my mom and dad’s house on Christmas day. My family and my sister’s. We eat and open presents and play games. This year my dad suggested we have tacos. We all loved the idea. We are all bringing something to add to the dinner. I am going to find a healthy bean dish. I am also making a couple of cookie recipes that I have never tried. You can see them here and here. I will take pictures and let you know how they taste and what my family thought.
I know that the fact that I have changed my life with what I put into my body will never be compromised. Even and especially on holidays. Why should it? When I celebrate life and love and my family and peace and joy….. the last thing I want to do is be killing my body with crap. I will be enjoying real whole wonderful food along with the wonderful day of joy.

These bars are good for a chocolate fix, protein boost, yummy fast snack, and were even used as a dessert replacement when I first started taking sugar away from my family.
There are only four ingredients and they are all good for you. They are easy to make and you don’t have to bake or cook anything.
Major point score.
You can use whatever nuts you like, I use Walnuts. I use about 1 and 1/2 cups. (I use this liquid measuring cup, so I realize that this measurement isn’t exact…..so you can add as much as you like but this is about how much I use.)
Add the nuts to a food processor, and blend until they are like bread crumbs.
Then you just throw in all of the other ingredients.
- 1/4 cup Coconut Oil
- 1/4 cup Cocoa
- 15 Pitted Dates
Blend until it is mixed well. You may need to stop and scrape the sides down with a spatula and mix a little more.
Scoop that out into a wax paper lined pan and press it down evenly.
Cover and put in the fridge for a couple of hours.
When they are firm, cut them and eat them. 🙂
I love zucchini, so this was awesome for me to do as a side dish. All I did was slice a really big zucchini and put it on a baking pan lightly coated with olive oil.
Then I sprinkled some parmesan cheese on top and baked them at 350 degrees until they were cooked through and the cheese was a little golden brown.
I still haven’t tried coating them with some egg and cheese and frying them in a pan, but they might be very good. And if you let these cook longer, you might get more of a crispy chip like thing going on.
I love that zucchini’s are so easy and fast to cook and add to almost anything.

One of my little secret weapons to staying focused and motivated is Pinterest. I joined about a year ago. None of my friends knew about it. My nephew’s girlfriend posted a comment to me on Facebook about how she thought I would like it. Oh was that girl ever so right. THANK YOU! I have visited it almost every single day since. At first it was just fun to find things I liked and save the pictures. After some time, I started to realize that what I posted on my boards was important because I am a firm believer that what you wish for, you get. It has been a big help to me as I have been changing my lifestyle. My “Food” board looked much different when I started than it does now. And as I find more blogs to follow with lots of good recipes, it is easy to add them to my board. That it is one of my biggest inspirations. Almost everything I cook now, I have found there. It saves all of the recipes for me, looks beautiful, and when I am ready for something new, I just go look. LOVE. I also started an “Inspiration” and “I work out” board. When I am feeling sluggish, bored, need to do something besides eat, or just having doubts, I go pin to those boards and I am revived. For people like me, who are very visual this is very helpful. I love being able to easily create a vision board. And it is so much more than a vision board to me now.
